Ingredients

1 1/3 cups water
1 cup uncooked complete-wheat couscous
1/2 cup solar-dried tomatoes, more thinly sliced (1.5 oz.)
Three scallions, green and white parts, minced
Juice and zest of 1 small lemon (2 tablespoons juice)
One-half tablespoon more virgin olive oil, divided
1 1/2 teaspoons fresh thyme leaves
3/4 teaspoon plus 1/eight teaspoon sea salt, divided
1 (five-ounce) bundle of clean organic child kale or spinach
Four huge organic eggs
1/eight teaspoon freshly ground black pepper

Instructions

In a massive saucepan, bring the water to a boil. Stir in the couscous, sun-dried tomatoes, scallions, lemon juice, zest, one tablespoon of the oil, thyme leaves, and three-fourths of/teaspoon of salt. Top with the kale. Cover, remove from heat, and allow to stand for 5 minutes.

One tablespoon toasted sesame oil
One small warm chile pepper, minced
1/4 cup organic applesauce without added sugar (or two tablespoons coconut palm sugar)
three tablespoons fruit-sweetened ketchup
three tablespoons of clearly brewed tamari (decreased-sodium or ordinary)
One tablespoon of apple cider vinegar or lime juice
One teaspoon of grated sparkling ginger root
3/4 cup vegetable broth

Stir-Fry

Quick Beef Stir-Fry

One-half tablespoon of avocado oil or coconut oil
Eight ounces of tempeh cut into 1-inch pieces
One small red onion, huge dice
4 cups clean seasonal greens or pre-packaged veggie aggregate
Two large or three medium purple, orange, and yellow bell peppers, seeded and julienned
Three large garlic cloves minced
three scallions, reduce into one-half-inch pieces on the diagonal
1/4 cup dry-roasted peanuts
Fresh cilantro leaves for garnish

Instructions

To make the stir-fry sauce, fully heat the sesame oil in a large saucepan over medium heat. Add the new pepper and saute until fragrant, approximately 1 minute. Add the applesauce, ketchup, tamari, vinegar, ginger, and broth, and prepare dinner until the sauce mixture thickens slightly, approximately 12-15 mins. Set aside. (Note: This stir-fry sauce may be made earlier and chilled.)
To make the stir-fry, fully heat the avocado oil in a wok over high heat. Add the tempeh and onion and stir-fry until the tempeh is golden brown, about three minutes. Add the seasonal greens (such as broccoli), bell peppers, and garlic, and stir-fry until the veggies are heated, about 2 minutes. Add the sauce combination, scallions, peanuts, and stir-fry until the vegetables are crisp-smooth, approximately 2 minutes.
